Roasted red peppers are often an overlooked “treat”. They are tender, naturally sweet and add a bit of smoky sweetness to a dish. They can be bought in jars or roasted on the grill. These delicious roasted red peppers are a great addition to meals.
I buy red (orange and yellow) peppers when they are on sale and roast them on the indoor or outdoor grill. I roast them low and slow until they are sweet and tender. Then I put them in several sandwich bags and store them in the freezer. I use the frozen ones in cooked dishes and save some freshly grilled ones for salads, wraps, and sandwiches.
Bell peppers come in a range of colors, including red, which are the sweetest, orange, yellow, and green. Green peppers are harvested earlier before they have a chance to turn yellow, orange, and then red. Red peppers are the most nutritious because they have been on the vine the longest.
They are rich in vitamin C, vitamin A, and beta-carotene. Vitamin C is fundamental for the growth and repair of body tissues, including muscles. Beta-carotene is a pigment found in plants that gives them their color. It short, it is Vitamin A which supports eye health.
Many Uses of Roasted Red Peppers
These peppers add a pop of color to any dish. They are easy to cut into strips or chop into smaller pieces. A special treat is to eat them right off the grill as a snack or with the meal. Here are some of my favorite ways to use them.
Eggs-quiche, scrambled eggs, omelets, with fried eggs
Mexican-tacos, homemade refried beans, casseroles, fajitas
Italian- antipasto, marinara, pasta, pizza
Dips- hummus, cheesy dips
Roasted Vegetables- add them to any combination (zucchini and yellow squash, onions and mushrooms, broccoli and spinach, etc.)

These vegetables can easily be roasted and added to many dishes. They not only enhance the flavor but also the appearance due to their bright red color. These delicious roasted red peppers are a great addition to meals.
