New Favorite Recipe

I get in a rut sometimes and make the same meals over and over.  I know how long it takes to fix them and what I need to buy at the store.  It makes mealtime easy.  I try to mix it up and get out of the rut. That is why I am always looking for new things to make.  I was so excited recently when I found a new dish that has turned out to be my new favorite recipe.

Criteria for Recipes

New recipes have to meet certain criteria.  Some of the items on my list include:

  • Healthy food
  • Focus on vegetables
  • Easy to fix
  • Husband Steve likes it

New Recipe

My new favorite recipe is a mixture of a few recipes I have been making.  Here is how I put it together. 

I really like Brussel Sprouts and have been roasting them in the oven.  They are delicious.  The one problem is that my husband Steve does not like them. 

Quinoa is a grain I have been using more.  Sometimes I make quinoa mac and cheese which is a “healthier” version of our favorite baked comfort food of macaroni and cheese.

The final ingredient is fresh mushrooms.  They taste great in about any recipe!

Since Steve does not like roasted Brussel sprouts, I shredded them in my food processor.  They come out fine and thin.  I then grilled them with the mushrooms, they were tender and kind of crusty.  Before serving I added the cooked quinoa.

Recipe

15 large Brussel Sprouts shredded

1-pint portabella mushrooms, sliced

Grill the above two ingredients then add

1/2 cup dry quinoa, then cooked according to directions

Season with EVOO, salt, pepper and garlic powder

This recipe makes a great meal on its own.  I usually, however, serve it with grilled beef or pork.  I like making a large quantity because it tastes great warmed up for breakfast with a fried egg on top.
